For some people, avoiding gluten is not just a fad, it's a way of life.
Alegent Health clinical nutrition manager Kristyn Lassek, who also has celiac disease, said it's important to eat plenty of fruits and vegetables since it can be more challenging to get enough fiber from gluten-free foods.
