Four Healthy Foods for the Fall

Try these four healthy foods, available this fall at Midwestern farmers’ markets:

1. Aronia Berries

Native from Canada to Georgia, aronia berries are similar to blueberries except that they are tarter than most berries—they might make your mouth pucker when eating them. Most people like that dry, mouth-puckering quality of dry wines and aronia berries. Freezing reduces this effect. Aronia berries can be eaten fresh off the bush or used in bread, muffins, pies, and other baked goods as well as jams, jellies, and syrup. They can be blended with other fruits for a delicious smoothie. Like other berries, cherries, bananas, oranges, apples, and pears, they are valued nutritionally for their anti-oxidant benefits, vitamin B6 and potassium.

2. Squash …spaghetti and pumpkin

Just as the name sounds, when cooked, spaghetti squash has noodle-like strands that are easy to scoop out. Top with basil, oregano, and parmesan cheese, or simply top with your favorite spaghetti sauce. Pumpkin is also a squash, although we use it for its seeds and cutting jack-o-lanterns. This year when cutting your jack-o-lantern, save the pieces and then roast them in the oven. Scoop out the tender cooked pumpkin, sprinkle with cinnamon and some “spray” margarine. You can enjoy this treat after lighting your carved jack-o-lanterns.

3. Apples

Fall is the time for apples. Instead of going for your tried and true kinds (like red delicious and granny smith), this year, be adventurous and sample a variety of apples from wine sap to pink lady.

4. Late Summer Greens

Thanks to our local farmers, many of them plant a late summer crop of greens. Many have a wide variety of fresh greens for sale such as arugula, kale, varieties of spinach, cilantro and herbs. Enjoy this freshness as we move into the far away California greens for winter.
