3 cups leftover mashed potatoes (or cook and mash 3-4 large potatoes with ¼ c. fat free sour cream and 2 Tbsp. skim milk)
1 tablespoon olive oil
1 onion, chopped
3 cups diced leftover cooked turkey
2 cups leftover vegetables or 2 cups thawed peas and carrots
1 tablespoon chopped fresh parsley
1/4 teaspoon dried thyme (optional)
1 cup leftover turkey gravy or Heinz low fat turkey gravy
Black pepper to taste
Saute onion in olive oil until soft. Stir in turkey, vegetables, parsley, thyme, garlic,. Add pepper to taste. Transfer meat mixture to a deep dish pie pan or casserole. Spread potatoes over meat. Pour gravy on top. Bake at 375 degrees F (190 degrees C) for 30 minutes, or until potatoes are lightly browned.
